Here's a random recipe I made up for my dinner. Not sure what to call it though. And for you spinach-haters, you can barely taste it! So you get your vitamins with a yummy taste! =D
Chicken w/ veggie dinner (ah, there's a name)
For 1-2 servings
1 chicken breast cut into small pieces (about the size of a 1/2 dollar)
1/2 diced green pepper
1/2 diced onion
1 1/2 cup spinach (fresh)
2 Tbsp mustard (reg or Dijon)
3 Tbsp mayonnaise
1/2 tsp apple cider vinegar
Sprinkle of sugar
Directions
Put the peppers, onions, mustard, mayonnaise, vinegar, and sugar on the skillet to cook. Leave until tender and lightly browned. Next, put the chicken right on top to cook. After the chicken is fully cooked, put the spinach in for only a minute or so. You do not want your spinach turning too much to mush! Place on plate and enjoy. =)
P.S.
The sauce part might sound disgusting, but it give it a nice flavor!
