So this morning I had to use up some cucumber before it went bad. I thought, hey you can fry squash, why not cucumber.... I started by cutting the cucumber and dipped it in a badder to fry. I left it for about a minute on one side and then flipped. It looked so pretty on the plate. And then, I tasted it (boy can looks can be deceiving). As soon as it touch my mouth, I almost gagged. It was disgusting! I tried to play it cool as my brother walks in and goes "WHAT is that smell?!?!" " It is just my fried cucumber... It's really good, you want some?" I said (lol). "No thank you, it smells gross." was his reply. I couldn't hold it in anymore, "That is because it IS gross" I said, as I spit out the disgusting mouthful in the trash. He just started laughing... Needless to say, the lesson was learned: DO NOT COOK CUCUMBER! Ha Ha
My second attempt at using up the cucumber turned out much nicer! I made a cucumber smoothie. And before you think, "GROSS, first the frying, now 'smoothying'?" Let me tell you how yummy it was! I put a few slices of (prob 1/4) of a cucumber, 1 once cream cheese, two table spoons plain yogurt, cream, almond milk, and sweetener. I blended everything up so the cucumber was not textured, but smooth, pored in a glass, and drank. It sounds like a funny combination, but it was really good-- much tastier than frying them!
